Spiced Avocado over Veggies and Romaine

1/2-1 head romaine, chopped
1/2 red bell pepper, chopped
1 ear corn, kernels removed
1/4 red onion, thinly sliced
1 clove garlic, minced
handful cilantro, chopped
handful alfalfa sprouts (opt)
2 avocado’s
juice of 1-2 lemons
1 tsp. chili
1 tsp. smoked paprika
1 tsp. cumin

Place all veggies in a large salad bowl, scoop the flesh from one of the avocado’s and lightly mash it in to your veggies with the lemon and spices. This will make the whole salad creamy and then you can top it with chunks from your other avocado.

Dessert was Flourless Chocolate Chip Cookies, warm and crumbly from the oven.
