Countdown to Living Thanksgiving

For the past two years my roommate, my girlfriend, and I have prepared a very untraditional raw vegan Thanksgiving dinner. We’re cheeseballs so we like to call it our “Living Thanksgiving” ;). Every round involves an entire day in the kitchen (which I completely love), lots of photographs and fun, and bonding over stomach aches when its all over. As much fun as it is to go all raw gourmet for a day, the heaviness of the usual nutty, oily raw dishes have left us feeling less than wonderful after dinner. I guess thats come to be expected after a Thanksgiving feast but its not what I’m aiming for this year! Living Thanksgiving will commence as usual but I’ve been carefully planning our (hopefully much lighter) menu and am excited to spend the next week sharing the dishes I (with the help of Sylvia the Awesome Roommate) will be preparing.

On the Menu:
Cauliflower Couscous with Herbs, Sun Dried Tomatoes, and Olives
Natalia Roses Pumpkin Pie in a Bowl (with a twist!)
Raw Creamed Corn
Pesto Stuffed Mushrooms
Fresh Jicima “Potato” Salad
Chocolate Covered Katies Coconut Cream Pie
Spiked Vanilla Chai

Last Years Living Thanksgiving
