Sweet & Salty Fennel Fries
Sweet and salty…crispy and chewy…absolutely delcious
I ate these hot from the airplane oven and tossed with a salad of fresh greens, soft sheep cheese, sun dried tomatoes, and a lemon-stevia dressing.
I’ve had the pleasure of coming across a few bits of inspiration this week and I thought I’d share. Some great stuff to check out over the weekend:
Sign up for the Rawpalooza and listen to the first interview with the amazing Dr. Fred Bisci.
Whip up a batch of Kimberly Snyder’s Coconut Green Smoothie.
Another winner from Mind, Body, Green: All Things Must Pass.
Tera Warner interviews Colon Hydrotherapist Extraordinairre, Michael Perrine.
I discovered this awhile ago but my body has been loving yoga to the max the last couple of weeks. My go-to spot is My Yoga Online.
Enjoy!
Ingredients for Tasty Fennel Fries:
2 bulbs fresh fennel
1/2 Tbsp organic butter
sea salt and stevia
Preheat oven to 350. Remove stems from the fennel and pull apart the layers, cutting into fry or chip-like sizes. Melt butter and coat fennel pieces, sprinkling with salt and stevia. Place in a single layer on baking trays and bake for 45-60 minutes.

Mmmm… those fennel fries sound fantastic! Making that this week, for sure.
