Here are the delicious eggplant pizza’s recently promised!
Ingredients:

a log of chevre
a handful or two of baby spinach
1-2 cloves raw garlic, minced
a few leaves of fresh basil
Preheat oven to 425. Place thin slices of eggplant on parchment paper and bake for 15 minutes. Heat a small pan on medium-low and slowly melt cheese. Add spinach, garlic and basil until everything is wilted and well mixed. Spread cheese mixture over toasted eggplant slices.

Oh yes ! This is my next one
Thanks for more great inspiration!!
Oh yum! Have you ever found a decent sheep or goat ricotta? I’m always on the lookout for it, but can never find it. My favorite pizza from the past was a white pizza with tomato, broccoli, and ricotta. Growing up in Jersey means pizza is pretty much a food group. It’s why I put cheese on everything and could never do the detox thing without it.
Awesome idea. Have you ever found a worthy sheep’s or goat ricotta? I haven’t, and I’m always on the look out for it as my favorite pizza from the past was a white pizza with tomato, broccoli, and ricotta. Growing up in Jersey makes pizza a food group. I have so much passion for all things cheese because of it. lol
I had never seen goat ricotta until I was in New York recently! I didn’t try it sadly, I was already overwhelmed with all the new, delicious and exciting things there were to eat while I was there!
Rande, your brilliant! Can’t wait to try! I agree with Marlena and would love to hear your thoughts on it. Traditional pizza does not agree with me- This BABY would!
Sounds super delicious Rande! I’m excited to try it! I am such a huge fan of eggplant these days. I made eggplant garlic-bread when I didn’t have tomato sauce one night.. the fun just never ends! hahah
