Vegan Pizza Veggies

One of my favorite go-to meals on a normal night is a bowl of freshly steamed veggies with marinara and melted goat cheese. I was craving something pizza-ish but since I’m experimenting with veganism this month I omitted the goat cheese and replaced it with olives (quality is important, get good ones!) and nutritional yeast. Nutritional yeast isn’t for everyone, I find it more nutty than cheesy but I’m a fan regardless. This would also be delicious with a homemade marinara, something I’m hoping to experiment with again soon.

Ingredients:

veggies of choice (I like broccoli, cauliflower and zucchini)
your favorite organic marinara sauce
your favorite olives
nutritional yeast (optional)

Steam veggies until soft and top with hot marinara, chopped olives and a sprinkling of nutritional yeast.

  2. That looks so good. I have recently begun to put nutritional yeast on everything. The olives are a nice addtion.

  3. What does the nutritional yeast do for the flavor? I’ve never had it before, but Dede just gave me a bag that I have yet to open! I was already planning to have broccoli and cauliflower with grated raw goat cheese on top for dinner tonight, its one of my go-to, so simple meals :)

    • A lot of people think nutritional yeast tastes cheesy and a lot of vegans use it to substitute cheese in their recipes. I think it tastes a bit nutty but it’s delicious regardless.

    • Oh dear, you’re right! and to think, I ATE it ;) I swapped that one for the other pic I got, it’s not as good but at least there’s no fly!

  5. I LOVE veggies and marinara together! I often will roast them and then dump my fav sauce and fresh basil on top.

    And I totally agree – nooch is more nutty than cheesy… which is why it’s in the Oatmeal Cookie Shake I posted today. Surprisingly good!
