Dark Chocolate Sweet Potato Truffles

Last night we took our dinner to a gorgeous park overlooking downtown Seattle. The soft sunshine was dreamy as were these truffles…we made sure to eat one before dinner just to make sure they were dessert-worthy ;)

Ingredients:

1/2 cup mashed sweet potatoes
2 oz dark chocolate

Place ingredients in a pan over medium heat. Stir together until chocolate is melted and thoroughly mixed with the sweet potato. Scoop into small round balls and refrigerate until firm.

    Did you come up with this idea yourself? I tried it last night. WONDERFUL! It wasn’t as neat as you recommended. I just dropped a whole bar in the pan, then dumped a whole baked, deskinned sweet potato on top. I mixed the melty mess together and ate it like that. Sooo good and no stevia needed. Brilliant!

        Well I thank you because I think this will be my nightly treat for some time. I was getting really tired of just plain chocolate. I let is sit in the fridge that night and had it yesterday after work. Even better. Great job.
