An Interview with the Blogger Behind Jen’s Food Challenge

When I was in New York recently one of the biggest treats of the week was getting to meet Jen of Jen’s Food Challenge who was also there to take Natalia Rose’s Advanced Training. We got along so well and I loved hearing all about her transition into a detox lifestyle. I hoped I wouldn’t scare her off by asking her to share with us here, thankfully she was glad to do so! Tell us who you are and a little bit about yourself:

I grew up in NY with one side of the family being from an Italian background so this way of life is still a bit of a shock to them. I love art and always drew and painted since I was young, but I also loved science. This way of life works so well for me because I love reading about different nutrition philosophies and then I get creative in the kitchen (including re-working Italian dishes).
I’ll let you in on a couple of silly little things I do. So in order to relax sometimes without dragging out all the art supplies, I color with crayons in a coloring book. No kidding – it’s fun, try it out. A couple of month ago, I walked into a store and a box of hula hoops were next to the counter. I bought a bright pink one – sometimes you want to feel like a kid. I don’t use it very often because it confusing the poor dog, but for $5 and something that takes up no room – why not?

What brought you into a detox lifestyle and how long ago did it first catch your eye?
My husband brought home Natalia Rose’s book years ago. I read it, and although it made so much sense to me, I didn’t understand how I could manage the lifestyle at the time and the book went onto the shelf. When I was told I had to do a yeast free diet a few years later with a lot of supplements, the yes/no list of food and other things that didn’t seem to feel right, I decided there had to be a better way. I began researching candida, picked up the dusty book on the shelf which made sense years before, read more and more books and my journey began. I was already a vegetarian, so my next step was figuring out how I could go further and part of that was getting creative in the kitchen re-working old favorite comfort foods.

What positive changes have you noticed in yourself since you started (physical, emotional, spiritual, etc)?

When I follow a more candida conscious diet, my face is clear from breakouts. I also have been able to maintain weight in a healthy manor verses previously when I would drink sugary chocolate shakes and eat tons of pasta and breads. I also have tons of energy. I now crave things like tomatoes and avocados and not cookies – WOW.
My taste buds definitely changed as well. Ripe strawberries are an amazing treat. I now like olives, which I never did before.
I feel much calmer in stressful situations – which is awesome!
One of the coolest change is I used to suffer terrible cat allergies leaving me sneezing, teary eyes, and congested with breathing issues. I recently discovered this to not be the case anymore. I was around a couple of cats for hours and had a minor stuffy nose – much improvement.

What have been the hardest parts of living this way and do you have any tips to share?

The hardest thing at first for me was when I did an initial Candida cleanse. I had no idea how severely addicted to sugars and breads I was. The cravings for pasta, bread, cake, and cookies were so strong and really put my will power to the test. If you are doing a Candida cleanse, just hang in there because the pay off is worth it! I now can sit in a restaurant and have no desire to have a piece of bread – amazing. And if you slip up a little, it’s ok, just keep going.

When I first began, eating out was a bit of a challenge for me more on a social level. One time we were going to a buffet style private party at a bar where I knew there would be nothing for me to have. I prepared by eating ahead of time. I knew I would want a little something when I smelled and saw food, so I threw carrot sticks and a dark chocolate bar in my bag. When I wanted something, I grabbed a plate from the buffet, added a bit of salsa that was available, pulled my carrot sticks out of my purse and put them on the plate. I didn’t feel left out and I had something healthy. When dessert time came, I had a piece of my chocolate bar. So my tip is be prepared and don’t be afraid to get a little creative.

What inspired you to start your blog?

I wanted other people to realize that healthy meals are colorful, delicious, full of flavor and can be as simple or complicated as you want. I hope my blog will inspire people to experiment with vegetarian and properly combined dishes, even if they don’t follow that path on a regular basis. People ask me all the time what I eat and are always surprised about the huge variety in my diet. I am never bored with meals, even salads. I wanted to showcase healthy eating is fabulous with endless possibilities. I applaud you and your blog for showing people this as well.

Do you have a favorite recipe you would like to share with the Veggie-Centric Kitchen readers?

My favorite recipe at the moment, which is on my blog is definitely Avocado Salad. It’s my husbands favorite as well and he does not follow a detox lifestyle. I think I’ve made it 3 times in the last week! I love this recipe because it is so versatile, takes no time to make, and you can change it up depending what you have on hand. Here’s the basic recipe and some options you can do with it. The quantities below make enough for 2.

3 Avocados
1 cucumber
1 red pepper (or any color)
Handful Orange cherry tomatoes (or any kind you have)
1 lime (or lemon)
1/2 small red onion (optional, made it before with and without)
1-2 cloves garlic (optional)
Sea salt to taste

Open avocados and add large chunks to a bowl. Chop cucumber, pepper and onion and add to bowl. Zest garlic and add tomatoes. Squeeze juice of one lime and add sea salt to taste. Give a gentle toss to combine all ingredients. Feel free to omit or add any ingredients you want. I change this up all the time.

Some options: eat avocado salad alone, add to kale (yummy, makes creamy kale salad), add to your favorite greens and sprouts, add to buckwheat soba noodles, have it in a cabbage or lettuce leaf with your favorite salsa, and my husband’s favorite is with corn chips. So many possibilities! I hope you enjoy this one.

Tortilla-Free Eggplant Quesadillas


Ingredients:

eggplant
goat cheddar
salsa
organic butter

Slice eggplant very thinly on a mandoline. Heat a pan on medium-high and lightly coat the bottom with organic butter. Place a slice of eggplant in the pan, add a layer of thinly sliced goat cheddar and top with another eggplant slice. These are very delicate and easier to flip with a fork than a spatula. They will cook very quickly so keep an eye on them. When both sides are browned and cheese is melted, remove from pan, top with salsa and eat!

Tomorrow is my birthday. Yes…I was born on Earth Day. I’m in the midst of deciding if I want to celebrate by spending the day in the kitchen making elaborate treats (seriously a decadent day for me) or making Britney cook me birthday dinner ;) In the meantime, does anyone want to send over a batch of these?

Earth Day Peanut Butter (or almond butter!!) Cups. Yes, please.

Pinteresting Dinners and Breaking the Farmers Market Fast

Farmers markets and “pinteresting” dinners. That was my weekend. Oh, and rehearsing for this ;)

Saturday morning I broke my Winter-long Farmers Market fast with my first trip of the season. We stocked up on veggies…

…and farm fresh turkey eggs.

National Pecan Day was celebrated…

…and I finally got around to making some dishes from my massive Pinterest collection! Saturday night was all about the Detoxinista starting with this delicious Red Pepper Cheese Sauce over zucchini noodles and ending with the un-pictured (but extraordinary) Almond Flour Sugar Cookies. I was unfortunately reminded of how difficult nuts can be to digest however, maybe one (not three…) would have been kinder to my system.

Tonight I attempted a version of these roasted sweet potatoes that were slightly disappointing. They were still tasty (can you really mess up a sweet potato) but not as crispy-on-the-outside-soft-on-the-inside as promised. I made mine with coconut oil, organic butter, and sugar-free maple syrup.


And now, after a weekend of beautiful sunshine, I’m already missing the rain because I can’t stop listening to this

Caramelized Onions & Dry Roasted Cauliflower -w- Tahini Sauce

Hello from the return of our road trip! I am thrilled to say we are back in home, sweet, Seattle. We began our road trip today at our favorite Good Food Store:

The Good Food Store in Missoula, MT.

I stocked up on fresh green juices, tea, and coconut water as well as dinner items (a new-to-me raw sheep cheese, nori and sprouts for wraps, carrots and local salsa for dipping, and a bar of Endangered Species Hazelnut Dark Chocolate). Britney had a breakfast that included both tofu AND bacon much to the confusion of the server ;)

I’m incredibly grateful to my new friend Renae who sent me this recipe after I practically drooled all over her when she first told me about it! I’m a little behind on recipes after being gone for the weekend so this was just in time. I’ve been on such a cauliflower kick lately too (not to mention tahini!). Thanks, Renae!

Ingredients:
1 red onion, sliced
2 heads cauliflower, broken apart
4 Tbsp tahini
juice of 2-3 lemons
1 Tbsp nama shoyu
salt and pepper, to taste

Heat a saucepan and cook the red onion in a pat of coconut butter and a little stevia. While onions are cooking, dry roast the cauliflower until soft. Combine sauce ingredients and coat onions and cauliflower.

Questions for a Cleanser with Ana Zaharia

This is the last in the Questions for a Cleanser series and it’s brought to us by Ana Zaharia of Brave Lil Juicer! Ana’s blog is packed with drool-worthy recipes (you’ll find one below!) as well as health and detox tips. She has studied with Natalia Rose, and also gives health consultations.

Who are you?

I am an art school veteran, who discovered the vital importance of juicing and detox eating at a time in my life when most people would have considered “inconvenient”. I was running off 2-4 hours of sleep, and just like bathing, it was a luxury people in my program couldn’t afford. I started my blog to give people a place to go and find my tips and recipes that I would always go on and on about. Now I am halfway through my health councilor certification at IIN, and have taken Natalia Rose’s advanced detox seminar ! I have always been passionate about natural healing, but the past few years I feel like I have really found the key to all the “chronic” and “hereditary” problems that plagued me, and the rest of the world. I love helping people heal, and being able to spread the word about the deliciousness that is found in nature :)

What were your reasons: physical, mental, emotional, spiritual, etc for embarking on the cleanse?

I was already juicing until dinner a few days per week, having been following the detox for women lifestyle for a few years now. I love the thriving energy and community spirit that is always found in the Detox The World events. People want to genuinely bring each other up and support one another. That is something that lacks in the design world, as well the place I grew up and the schools I attended. The genuine pure intent of helping and caring for others is probably a big reason why I was drawn to this work as well. With this cleanse I wanted to deepen my understanding of my body, and its interconnectivity to everything else. I also wanted to deepen my healing, having battled painful chronic UTIs and feeling self conscious about my “incurable” hereditary Keratosis Pilaris my whole life.

What detox symptoms, if any, have you experienced?

Hahaha… I feel like I have experienced every detox symptom in the book. If this cleanse did only one thing for me, I would say that it made me realize how much cleansing the body really has to do in order to reverse the damage of living in our modern world per its mainstream standard of normal and “healthy”. I have had crazy waking dreams which have left me feeling exhausted in the mornings; I have been moody and susceptible to intense highs and lows; I have had some bloating, and a few skin reactions; I have had all my old issues resurface so that they may leave, and some intense cravings after a really hmm.. “productive” colonic. It has a been a really wonderfully satisfying roller-coaster though.

What positive changes have you noticed?

1. I have become really in touch and attracted to nature

2. I have realized how the artist inside myself can help me visualize myself into a better place

3. I have created better communication between my physical, spiritual and emotional body and have been subconsciously adhering to my intuition;

4. I have developed a more loving relationship with myself, leaving some of the old self-hatred and criticizing self behind

5. The areas of myself that I want to keep working on seem much more attainable and within reach

6. My clothes fit better.. and I am more attracted to the colors vibrant green, soft pink and violet

7. I crave more vegetables (not having realized that was even possible)

8. I’m experiencing more genuine effortless happiness and gratitude for life

What was your lifestyle like (regarding food and health) prior to the cleanse and what are you planning for after the cleanse?

I have been on and off juicing until a well combined (mostly yeast-conscious) dinner on days that feel right. On most days I would enjoy a salad in the late afternoon or a green smoothie. I would occasionally go out for brunch and enjoy a veggie omelet, and have people over for home made cocktails and treats. I introduced colonics right before the cleanse and they have really taken my detox to the next level. This level has been kind of a solitary one, so coming off the cleanse I will be introducing some of the late mid-day meals again for the social aspect. On weekends especially it’s been hard to spend time with my boyfriend, family or friends without eating. I have found it hard to ground myself and socialize while juicing. This will also slow down the cleansing to a more manageable level which I know my boyfriend will appreciate ;) I will still allow myself the occasional high quality wine or cocktail but haven’t really felt the desire for it as much, so I will respect that. Mostly, I will be listening to what my newly cleansed and intuitive body tells me, and honor it with my best judgement.
I fully intend to spend more time outdoors, and in nature whenever possible. This has been a really nurturing aspect of the cleanse that hasn’t involved food. I especially want to go hiking!

Are there any tips or inspiration you would like to share with fellow cleansers or those curious in a cleansing lifestyle?

Cleansing is a really individual experience, so it’s hard for me to say. But also on the same note, I think it’s hard to cleanse with someone. Take plenty of time to be with yourself and explore the things that are coming up for you. At least take note of them. Also, really focus on the aspects of the cleanse that you are loving! Try not to linger in what you miss.. this is not helpful.
Overall, I have been inspired by the noticeable differences in my whole body and outlook and knowing that so many others are experiencing the same thing. Positive change and high vibration living has become so attainable, and it can be for anyone that will allow themselves to go down the rabbit hole!

My favorite recipe that I discovered during this cleanse is:

Raw Coconut Cream Yogurt w/ Chocolate Raspberry Crumble

Serves 1

Blend:

Meat 1 young coconut
Juice 1/2 lemon
1/4 vanilla bean scrapped
1 tsp vanilla extract
10 drops stevia
1/3 bio-k dairy free culture
Let sit for 1-3 hours

Top with mix of:

1/4 cup muddled frozen raspberries
1-2 crushed dark chocolate squares
3-5 drops stevia
