Merry Christmas Eve Eve

Brit and I are going on a mini-vacation to Vegas over Christmas so we celebrated with presents and Christmas dinner a little early this year. Many traditional dishes were served (stuffing! ham! mashed potatoes!) but I didn’t feel the slightest bit deprived during my first fruitarian holiday. I actually managed to make a salad bigger than my appetite!

I loved this holiday dish from 80/10/10 chef, Kristina Carillo-Bucaram and to my delight, so did everyone else!

Cucumber Gazpacho

Cucumber Gazpacho
Ingredients:

2 cucumbers
2 stalks of celery
handful of cilantro
1/4-1/2 of an avocado (opt)
one lemon, peeled
1 red bell pepper, seeds and stem removed
3-4 green onions
1 clove garlic (opt)
1 ear fresh corn
sun dried tomatoes

Blend cucumbers, celery, cilantro, avocado and lemon until creamy. Chop remaining ingredients into bite sized pieces and add to blended mixture.

Experimenting with Fruit Based Salad Dressings

Spending the day on juices, smoothies and simple fruit meals is a piece of (fruit?) cake but by the time dinner rolls around I’m ready for something savory. The 80/10/10 plan omits added salt which has honestly been the hardest thing for me so far but I feel like my taste buds are definitely waking up to some subtler flavors. I’ve played with a few dressing ideas but my favorite base so far is definitely mango. I’ll call this dressing 80/10/10-ish because generally garlic and onions are also omitted and combining fruit with fat is generally discouraged. Since this is all very new to me I’m giving myself a little flexibility!

Mango Dressing

Ingredients:

flesh from one mango
2 green onions
1/2 clove garlic
sliver of ginger
3 fresh dates, pitted
1/4 of an avocado (optional)
water for blending

Blend until creamy, using just enough water for desired consistency.

Spicy Curry Avocado Salad

I took a trip to our local Asian market and brought home several bags worth of goodies that I wouldn’t usually find on my standard Trader Joe’s run! This delicious salad was a result of that trip- It was eaten following a lunch of guava fruits (which I had for the first time!) and a dessert of durian custard!

Ingredients:

1 clove garlic, minced
2 green onions, chopped
1 stalk celery, chopped
1/2 cup raw okra, sliced
1/2 cup cabbage, shredded
1/2 cup cilantro, chopped
2 cups spinach, chopped
1 ripe avocado, diced
4 Tbsp hot curry powder
juice of 1-2 limes
salt, pepper and NuNaturals Orange Stevia to taste

Stir ingredients together until avocado and spices are creamed throughout.

Herbed Avocado and Hearts of Palm

Ingredients:

1 can sliced hearts of palm
1 ripe avocado, chopped
1 handful parsley, minced
1 clove garlic, minced
1/4 cup leeks, sliced
juice of one lime
salt and pepper

Toss and season to taste.

Carob Pumpkin Pie Green Smoothie

Alright so it’s not exactly green- the greens are hidden among the delicious flavors of carob and pumpkin pie!

Ingredients:

2 cups carrot juice
1 handful baby spinach
1 avocado
2 droppers NuNaturals Vanilla Stevia
2 Tbsp carob powder
1 tsp pumpkin pie spice

Blend until creamy.
