Spicy Curry Avocado Salad

I took a trip to our local Asian market and brought home several bags worth of goodies that I wouldn’t usually find on my standard Trader Joe’s run! This delicious salad was a result of that trip- It was eaten following a lunch of guava fruits (which I had for the first time!) and a dessert of durian custard!

Ingredients:

1 clove garlic, minced
2 green onions, chopped
1 stalk celery, chopped
1/2 cup raw okra, sliced
1/2 cup cabbage, shredded
1/2 cup cilantro, chopped
2 cups spinach, chopped
1 ripe avocado, diced
4 Tbsp hot curry powder
juice of 1-2 limes
salt, pepper and NuNaturals Orange Stevia to taste

Stir ingredients together until avocado and spices are creamed throughout.

What I Ate Wednesday

Green Carrot Lime-ade- romaine/lime/carrot juice diluted with spring water and lemon stevia.

Banana Berry Cocoa Green Smoothie – banana/mixed berries/romaine/cocoa/vanilla stevia.

Warm Avocado Miso Soup with chopped mushrooms.

Not pictured here are the dish of homemade cultured veggies and glass of red wine I had pre-dinner. Dinner itself was INCREDIBLE- Green Vegetable Curry from The Fresh Energy Cookbook and a packet of Justin’s Chocolate Hazelnut Butter for dessert.

Herbed Avocado and Hearts of Palm

Ingredients:

1 can sliced hearts of palm
1 ripe avocado, chopped
1 handful parsley, minced
1 clove garlic, minced
1/4 cup leeks, sliced
juice of one lime
salt and pepper

Toss and season to taste.

Fresh Blackberry Green Smoothie or Soup

The end of Summer has been crazy busy with lots of travel, lots of work, and obviously not much blogging! While I’ve been on blogging hiatus I’ve had a heap of discoveries and revelations about some of the topics discussed earlier this month, I hope to share more soon. I also picked blackberries. Yum.

Ingredients:

3 cups fresh blackberries
1 1/2 avocados
1 1/2 cups nut milk
a handful of spinach (optional)
stevia, raw honey, or a banana to sweeten or a pinch of salt for a savory option

Blend until creamy.

Spring Mix with Roasted Beets and Nutmeg Avocado Cream Sauce

This dressing is truly creamy and wonderful perfectly complimenting my current love affair with beets. I love leaving their skins on and baking them for 3-4 hours at 350. They get amazingly soft and sweet this way with crispy skins left intact.

Salad ingredients:

5 oz spring mix
4 roasted beets, chopped
1 ripe avocado, chopped

Dressing ingredients:

1 ripe avocado
juice of one lemon
1 dropperful stevia
1/4 tsp sea salt
1/8 tsp fresh pepper
1/8 tsp cloves
1/8 tsp nutmeg

Blend dressing ingredients until creamy and toss with salad ingredients.

Lemon Cream Pie Green Smoothie

Ingredients:

juice of 2 lemons
1 cup water
4 ripe bananas
1/2 avocado (optional)
2 dropperfulls NuNaturals vanilla stevia

Blend and drink!
