1 cup carrot juice
1 cup unsweetened nut milk
1 dropperful Nunaturals stevia
1 dropperful NuNaturals vanilla stevia
pinch of pumpkin pie spice
Bring nut milk to a boil in a small pot on the stove. Pour into a 16 oz mug, add stevia and pumpkin pie spice and stir. Add carrot juice and stir again.

The perfect compromise for chilly days when you can’t bear the thought of downing a cold glass of vegetable juice.
1 cup water
1/2 cup romaine juice
1/2 cup carrot juice
2 dropperfuls NuNaturals Vanilla Stevia
2 Tbsp cocoa powder
Heat water until boiling. Spoon cocoa powder into a 16 oz mug and pour water over the top, stirring until dissolved. Add juice and stevia and stir again.

This delicious dessert-of-a-salad was inspired by my Strawberry Citrus Cheesecake Salad. I’m sure it would be delightful with any berry but I’ll have to experiment to be sure
5 oz baby spring mix
1 cup fresh blueberries
3 oz raw goat cheddar, shredded
juice of three lemons
3-4 droppers of NuNaturals vanilla or regular stevia
sea salt and pepper
Toss, mushing the berries a bit as you go and season to taste.
After nearly a week of Britney requesting this smoothie for breakfast, I finally sampled it and deemed it blog-worthy! You can do more nut milk for a less thick shake or make the recipe as is and eat it with a spoon.
1 cup nut milk (we usually use coconut or almond milk)
1 1/2 cups frozen mango
1/2 an avocado
a small handful of greens (spinach and romaine)
1/2 tsp. cinnamon
Blend until creamy.
Weekend mornings are for sleeping in and special breakfast treats. On this particular weekend I enjoyed Ana’s indulgent Iced Carrot Latte and made a batch of these plantains for Britney. In the past I’ve made a lot of vegan pancake type items (thanks Chocolate Covered Katie!) but we’ve been trying for something lighter and this is what I came up with. There is a sweet and a savory version, Britney had the sweet ones for breakfast and I took the savory ones with me to throw into an avocado lettuce wrap at work!
very ripe plantains
coconut oil spray
nut milk of choice (I used coconut milk)
cumin or cinnamon
sea salt or stevia
Heat a pan over medium heat. Peel and slice the plantains into thick slices. Spray the slices with coconut oil and sprinkle with the desired seasonings. Place plantain slices into heated pan and pour a splash of nut milk over them, cooking until soft and crispy and then flipping. Remove when both sides are soft and crispy.

I sometimes try and find creative ways to have dessert without resorting to dark chocolate. In this case I loved the result…but still added chunks of dark chocolate bar after a few sips
1 baked sweet potato
meat and water of one young coconut
1 dropper NuNaturals stevia
1/4 tsp orange extract
dark chocolate chips or cacao nibs (optional)
Blend all ingredients adding chocolate chips when smooth.
